I think Notch should add another Biome. He should include a forest of Giant Trees. It could be less likely to spawn and could be one of the rewards (he spoke about in his blog post about 1.8) for exploration. Notch was talking about how he wanted to add an objective to the game and how he wanted to reward exploration and worl expansion. I think a series of rare, but spectacular Biomes/Areas would be a great way to do so.
Nope, not everyone is going to use the adventure aspect in 1.8 so a weird biome that is unrealistic would just mess up game play for a bunch of people.

The Texture Pack you may or may not like is just a button click away, Murder's Pack

California redwoods are a lot more common than giant mushrooms above the ground (but below the ground, there is a species of mushroom that that grows for two miles)
You gave me an awesome idea.. I'll post here as you gave me the idea.
What about Ice Caves. Like... in caves you sometimes find rooms... What if one was to be made of ice?
And pillars of Ice are in there and icicles on the ceiling. Similar to arrows but fall randomly. And the rooms wouldn't have much but would look so cool. And my friend had an idea of ice giants being in the rooms. 2 Skeletons tall.
This would add an ice Biome in caves. Sound cool? If this happens I'm so changing my texture pack to make Ice sparkle a bit more.

Ys -Crying- Why! Why must Sarah die! Why! At least there is still Feena and Reah to guide Adol through his Journey. But... Sarah got turned to stone... That is just plain cruel. Stupid Monsters.

How would it mess up the gameplay?

*exploring around* "I knew it was a good idea to make a diamond axe!"
Several days later "There I finally finished, now to go to tree number 2"
