No reason not to, I guess... except I would prefer that Notch worked on more important things.
That said, I like the idea and have some ideas that can make it better. If the player or a hostile mob is nearby, while an animal is sleeping, then it will wake up and run away, much faster than normal walking speed. If the player is sneaking, the animal will stay asleep.

I agree, this is a great idea. It'd add a cuteness factor to the game, if ya know what I mean. Plus, maybe if you have mobs in a lit up area at night, they start to...erm...get busy. Vwala, baby animals in the next day or x amount of time!
P.S. Animal mob farms are usually lit. If it is an animal and mob farm, they'd probly be woken up anyway. Or, they could be moved even when asleep.
It's pointless and all, but it doesn't eat up any precious block/item IDs so good show I say! The wolves have a special animation after getting out of water, so why the heck not?
Definitely a good idea. Seeing how Notch has mentioned making passive mobs more permanent this would be a neat thing as they will stick around. Good for farms.

I am assuming that would be to much coding for a pointless animation. Also, Notch and the team have to please so many people and I dought many people will care for this

Honestly, this isn't too much coding. If you break it down it is a timer set to the day and night cycle (calling another Java class is only a few lines). Then it does a light check to see if they are in a dark area, then it triggers the animation. If the light level changes or it becomes sunrise it ends the animation. From there you just copy and paste it for the other passive mobs and change the class files that need to be changed.
I do agree though, actual content takes priority. This is like the icing on the cake, only something that needs to be added towards the time of release. This could fit well with mobs being more permanent though.

I think it would be a great addition. Though they should despawn if they are sleeping in the dark for too long, so the world doesn't become overrun with pigs waking up from their short hibernation. :|
