I've never really found redstone to be particularly easy to use, it's large and unwieldy for even small circuits (doors, locks etc) and I think it could use a bit of slimming down.
What I suggest for this is a new crafting table specifically for redstone (might need to have a pretty large grid), you would draw out the schematic for your circuit in redstone and place any block type in another separate part of the crafting table. The result would be your intended circuit or logic gate embedded in the block, so if you want your wiring neatly hidden away you can put it in a wood block or a dirt block and there'd be no need for vast underground caverns or trenches to hide the wiring.
So, what do you think? Be honest now.
Edit: Since I didn't do the requisite search, I'll update this post with similar ideas so future generations can save time.

An interesting concept but you still have unseemly iron blocks dotted around, nowhere near as bad as redstone is now I'll admit, but still. Not sure how much work this extra room would be that's needed to edit the block either.
I think it's a good idea, but that's just me. However, that many different recipes with all the different possibilities of the redstone wiring seems like it'd be a pain to code....

Y'know what? I take that back. The search function on here is woefully inadequate. I just did a quick search myself and couldn't find anything, even though I know for a fact there are dozens of threads on this.
As for the idea, the practical applications are obvious. You haven't discussed what sort of size this would be though, how it would work in 3 dimensions (remember, some circuits need to use more than one level), how the GUI would work, how inputs and outputs would work with it, etc., etc.
Please expand the suggestion and address some of these.
Oh, and please make sure that you actually have to use redstone in the GUI. You'd be surprised how many of these suggestions seem to say that once you have your circuit box you can fill it with as much stuff as you like without hurting your supplies.
I'd appreciate it if you could link any threads of similar content here so I can add them to the list.
I'm quite the amateur with redstone but I thought that it required multiple levels because that was the only way to stop tracks from intersecting? If that is what you're referring to then you could simply (or not simply, I've no idea if it's possible) add a redstone junction to a block and place it at the point of convergence. If I've missed something here please tell me.
As for the crafting, I should think that the redstone usage shouldn't change much, the circuits would be just as complex as before though on a much smaller scale.
I actually LIKE how large redstone is to use. It makes sense: If you're stranded on an island should mean that making circuits should be large, bulky, and magical. Like Tux said.
That would be fairly simple. Say you wanted the lever three blocks from the door, you'd put three blocks of cobble onto the crafting table and three pieces of redstone in a line. This would output three blocks of cobbletone embedded with redstone in it in wire form.
Like so. (And yes, the crafting grid should be much bigger to accommodate larger, more complex circuits.)
The fact that your stranded on an island and can create circuits at ALL is amazing.
The fact that other people are doing what you consider hard is also funny.
Jeez, it's a game, we're not really stranded on islands you know.
And I didn't say it was hard, I said it's not easy to work with. I don't like having redstone everywhere and having to make room for it in existing buildings or accounting for it when designing a building is something I find tedious.
