I like the basic premise of your suggestion, but the examples you've presented are highly stylized. Great for a texture pack, but too... aesthetically definitive... for the core game. Minecraft's overall visual signature is much simpler than that.
However, I'd love to be able to make refined or modified versions of various blocks. Glowstone in particular.
It's not something that I think should be in development now, but it could be an interesting idea for an expansion sometime after the full release.
