Diamond is formed when Carbon is put under extreme pressure and heat. This can take millions of years to form naturally and isn't something a piston can do. (Especially one made out of sticks and redstone)
Diamonds can be manufactured but it isn't normally done with coal, and it produces very small amounts of industrial diamond.
Not very practical in the game's terms either considering diamond wouldn't be rare anymore with this.

Pistons aren't crafted with sticks. That renders your entire post invalid. But seriously now, I agree that if there is a way to make diamond, it should be such a long, painful process, that it'd be easier to get it legitimately.

As well, a tiny diamond "seed" is still required. You can't get something from nothing
edit: Thinking about it, take that condensed coal block and craft it with a diamond to make a condensed coal block w/ a diamond seed, add pressure on all sides for x amount of time, get stack of three diamonds? I have a feeling this would break diamond for Minecraft though.
This isn't reality, so citing reality in Minecraft is like using Just Cause 2 as a flying simulator.
