Sorry if there's not much more to this idea than what you already see in the title. I'll try and explain a little bit more here.
I don't want to just suggest "realistic gravity" because that's been suggested many times. What I want to add to the suggestion is the idea of tension and compression, and other architectural/physical principles applied to Minecraft blocks. Each existing block would have its own tension and compression values, which would cause the block to fail if they are exceeded.
The reason I suggest this as a separate game mode, is because in a lot of ways I really like being able to make flying fantasy castles in the sky. But sometimes I'm in the mood for a more "realistic" experience. That's not to say that a gravity mode is intended to be realistic. All I want is to add a demonstration of a few principles of physics and architecture; caricatures really, but enough to give an idea and a feel for what might happen if you tried to build these structures in real life.
Minecraft is already an awesome educational tool, and adding a realistic gravity mode would be an awesome way to make it have another dimension of education.
Something like this:
should be able to stand, but at some point
would be too much, and the overhang would fail. This is because the farthest-out blocks of cobble have too much tension, pulling their connection apart.
Also, a stack of sand should eventually fail if it gets too high:
will stand.
is unstable.
is stable.

Yes. The idea is to get these ideas from architecture and make them meaningful in Minecraft. The arch is a staple of architecture, so it should definitely work.
I don't know the math of it, but I have assumed that if you plug in tension and compression values for all blocks, structures like arches should naturally work, just on account of how the math works.
