Okay, so mobs are pretty boring right now. so here are some ideas to make them more interesting:
Cows
Different colors, gender
a male and female usually stay together, if the female is attacked, the male will attack you, running at the player's speed. can drop meat.
Pigs would normally be found near a new block: mud. Mud acts like soul sand(from the Nether)
and obeys gravity. Mud would be commonly found in the savannah, especially near water.
Some pigs would be wilder, like boars. they would look like black pigs with tusks. also attacks when attacked, similar to a bull. they would drop 0-2 tusks, used in making spears.
Spears do as much damage as a iron sword, but, since boars will be hard to find, spears would be rare.
AND YOU CAN CONTROL THEM WHEN YOU RIDE THEM.
Chickens
Chickens, when hatched from eggs, look like real chicks. after about 5-10 minutes, they would turn into full-sized chickens, which could drop raw chicken legs, which cant be eaten unless cooked, then they heal <3<3.
And roosters would be added and would drop more meat. Eggs can be cooked and eaten for <3<3<3.

Roosters will also crow at dawn if you are in a 50 square radius.
Some sheep would have horns, and be found near or on mountains. they drop more wool, but turn aggressive when attacked. They wouldn't have good accuracy, but they do more damage than any other mob(excluding monsters).
Squid
On EXTREMELY RARE ocasions, in deep water, you might encounter a giant squid.
Giant squids are harmless unless you sail right over them, thereby "scaring" it and making it aggressive.
Giant Squids are as large as Ghasts and make a 8X8X8 radius of water completely black.
When killed, squids drop tentacles, which can be crafted to make a whip. A whip does minimal damage or no damage at all, but can make an animal run in the opposite direction.

If roosters heal, why would anyone kill pigs? Meat is pigs' function.

Yeah, i guess mud should be a liquid, similar to lava, and i forgot to mention that chicken legs are stackable, up to 16. Forget the cookable eggs. and korthos, this topic isn't about adding NEW mobs, it's about making the ones we already have BETTER.
I mostly agree with Korthos, though I don't think too much detail is really needed if it's just minor changes to existing mobs.
I picture a Bull as a Cow with horns.
As to Pigs, I disagree on the mud. In the wild, pigs are actually quite cleanly animals. Boars sound good though, maybe could spawn in areas with three or more trees close together? Not too keen on the idea of tusks and spears, but maybe Boars could have a chance of dropping Mushrooms in addition to meat, as boars and wild pigs are often used in truffle hunting. Finally, I would make Boars an always-hostile mob with poor sight, which spawns in daytime, and continue the mushroom theme by having a saddled pig (boars would not be able to be saddled) become tame/controllable by feeding it mushrooms. You could actually tame any pig this way, but would get no benefit from it without a saddle.
I agree that Chickens should not drop meat.
Rams don't need to do extra damage. Instead, they should try to push the player off of ledges whenever possible, and maybe have extra knockback.
I'm not really feeling the tentacle-whip idea on Giant Squid. Maybe just a much higher drop rate. Possibly a chance to drop clay to all Squid (if for no other reason than to slightly reduce its rarity).
