After getting the feedback from my previous posts. I've hatched up some new, (hopefully better) ideas!
1.Zombie warrior. Has armor and sword. Was a knight in it's alive form. Drops armor and iron swords.
2.Skeletal archers. Leather armor and bow, Might introduce iron arrows? Pretty self explanitory.
3.Ghost! not ghast. Haunts the player around Nighttime on hard(er) difficulties in certain biomes like the woods? Could make loud, eeire, haunty noises as if to scare the player. Doesn't shoot fire balls or fly 50 feet above the lava pools of hell. Drops ghost plasma that may provide some possibilities for crafting for potions if that pops up.
4. Stags/Deer. A Quick passive animal that flees when within a certain distance. Would bring up sport hunting. And Male forms could drop antlers that could make a head ornament for decoration. Might also vension and leather.
I'll Try to add up all of my replied suggestions for one long list on my profile if your interested. But thats not going to go up for a while.

1. I came up with an idea almost exactly like this, Undead Warriors. In my idea they randomly spawn with different armors and drop different swords.
2. Skeletons are hard enough without armor IMO, but I like the iron bow idea.
3.As the second post said weak. I came up with Ghosts too but they mimiced the sounds of other mobs.
4. Suggested millions of times.

i like the deer idea, and the zombie warrior idea.
Someone posted an idea (different thread) for a mob that De-activates Nether portals, I love that one too...
To expand upon the zombie warrior idea, and zombies in general:
We already have normal zombies. They carry no weapons and don't wear any armor. However, what if zombies had a certain percent chance of spawning with armor and a sword? Of course, zombies without armor or weapons would be the most common. Zombies would have a much higher chance of spawning with weaker weapons and armor than weapons or armor made out of stronger materials.
The same would apply to skeletons. Since Minecraft currently only has one type of bow and one type of arrow, skeletons would only vary in the type of armor they wear. Unarmored skeletons would still be the most common, and skeletons would have a much smaller chance of spawning with better armor types than weaker types.
