I hate holding the Spacebar to stay afloat in the water. You always bob, you sometimes go under, you barely see where you're going and the spashing is so annoying.
My suggestion:
HOLD LEFT SHIFT TO FLOAT
You simply hold the button to tread water.

If there ever was a remote possibility that I would open Minecraft and see rocket ships and lightsabers, I'd much sooner take up alcoholism.

Search. It was everyone else's idea first, and it sucked every time.
The sneak button?
You wouldn't tread water to move, you would swim to move. Using the spacebar to get around in water is the games version of swimming.

Let's suffice to say I don't think using frickin flint and steel is going to light moss on fire...

Seems like a decent idea, kinda like holding shift makes you stand still while climbing a ladder.
I can't deny your logic, but your profile pics reference, and that username, bothers me.
I kid, but you can't exactly "hold" water, unlike with ladders. You shouldn't be able to do much while treading water.
What if you just stayed afloat, and you pressed shift to go down into the water, Eh?
Maybe how full your inventory affects if you sink or not, and if it is too full, you just use the space bar to stay afloat?

I don't mind having to hold space myself. I can see how this would be annoying to some people so I support. Until this gets added or in case it never does, here is a good trick. Jump in the water you want to swim in and hold Space (do not hold anything except Space!). Then press Alt and use the mouse to click on the window again. If you release Space now, you should swim automatically. From there you can just move around like you normally would with WASD and the Mouse. Pressing Space again cancels this effect.
I will immediately say no to inventory affecting movement speed and/or swimming physics though. That is just annoying.
