Corn is cool and it would be fun to be able to have a battle in a cornfeild.
So corn stalks would be 3 blocks high so they are taller than you. Unlike wheat there would only be one stalk in one seed. the stalk would stay there after you took the corn out. the only way to get rid of a stalk would to make a scythe, like so:
the wood could be replaced by iron, stone, diamond,gold. The corn stalk would drop a seed or two. to eat the corn you would use a pot which would be made like this:
You would then fill this up with water and put it on a stove.
Stove recipe:
Redshroom = Redstone
Corn= cooked = health + 2.5
Corn=Raw=Health+ 1.5

Come see my Dragon! it must grow, click the egg to visit!
So on the corn, Im confused. Do you ant the corn for a variety in edibility? Or do you want it just as a cool effect for battles?
And also, to me it sounds like your going through a process. Put in more detail about the stove and the pot. Do these new items and blocks have any extended uses instead of just the use of making "Cooked Corn"? (Sounds disgusting, why would you cook corn?) Give me a reason why a stove should replace a furnace. Why should a pot replace the bucket? Why should your scythe replace the one we have right now? Tell me these things.
you know, i actually like the idea of corn fields on minecraft, but the schyte and other mumbojumbo its a little redundant (the hoe is quite useless right now, let the hoe be the schyte)
a way of making corn different to other crops could be that while a cooked corn would recover you health (thus edible), raw corn could be used in farming, add a wooden chest like thing where you can deposit raw corn, (that gets consmued much like coal in the furnace, but slower) and as long as that chest thing have corn, animals mob such as pigs and chickens would atracted with priority to that point.
that way you ahve a good way of controlling those that otherwise can be annoying.
