Already there's quite a number of things you can do with the ores and gems, but there's many great ideas yet to be had for it. I'm not saying my ideas are great, that would be selfish and prideful. I just like coming up with ideas.
Anyways, let's start with coal.
First off, coal could be used to make a "coal" block which can cook a whole stack of 64 items, or be used to decorate your house as it would be almost as black as obsidian.
Next, you could make lanterns this way:

To use a lantern, you have to place it and then right-click on it with coal. While holding it, your character emits light like the torch. When holding it, a new addition to the GUI would appear in the upper right corner. It's a yellow bar slowly running out. (This image is what it would look like as the image in the minecraft jar)
When it runs out, the lantern goes out.
When the lantern is lit, you can also place fire with it. When you place fire it takes out a small chunk of the yellow bar.
Lastly is a "Fuel" for a burning fire. Tossing coal, charcoal or logs keeps a fire active.
Iron. The second most important rock in the game.
First, you can make Steel.
Steel is better than Iron, but worse than Diamond. To make steel, you first make an iron block. Then you cook the iron block in the furnace.
Ta-daa! You have a steel ingot!
Next, you can make an iron boat. Iron boats only float in lava and turns back into ingots when destroyed. A lot slower, but name another way to travel by lava.
Third is making iron stairs. If destroyed, it turns into six ingots. Same goes for gold.
Lastly, you can make an iron bow that is faster and can shoot farther.
Gold, the valuable but useless item.
Think for a second. Name three things gold is used for in real life.
...money...money..and trading..
Okay, how about minted gold coins?
They stack up to 64, and they are virtually worthless. You can make a gold coin stack like this:
It stacks up to 64, too. It's for storing gold coins. So how do you make gold coins?

And every time you craft it, it makes 10 gold coins. Why would this be needed? To show off how epic your fortress is.
Next is the 'Solar panel' Made like this:

Solar panels get energy from the sun rays. When this block is hit with the light from the sun, it starts emitting a particle to let you know it's working. It powers redstone wires while the sun is shining on it.
Why would this be useful? What does the sun mean? No more enemies except for Mr. Creeper.
A door that only opens during the day, dispensers that only work when the sun is up and whatnot. You guys would be creative about it!
After that is the Jump Pad.
Made like this: (Red mushroom = redstone)

When it is powered, it acts like a trampoline. Jump on it and it sends you flying. When you hit it, you start emitting particles that let you know that you can't take damage from falling damage while using the jump pad.
This will make gold useful, no?
Diamond. The hardest substance known to man.
First off, the 'Detector' Made like this: (red mushroom = redstone)

When getting close to an ore, the detector gets a red dot on it. It gets brighter when you get near it, and it turns orange when you're three blocks away from the ore.
You could argue that this would be too easy, but remember this: you're using FOUR DIAMONDS to make this.
Next is the Ancient Gem.
Made like this:
Hardest item to get EVER.
When you place it down and put fire around it, it "corrupts" the world. It takes the nether, and pushes it into your world. When it does this, your character blacks out, and then wakes up to the "changed" world. Some of it is grass and water and sand, while the other half is netherrack, soul sand and lava.
Also when you step on these "Corrupted" parts, the sky instantly changes black and the screen starts playing a "shaking red" animation like your character cannot handle the power of the nether. Also ghasts spawn in the nether areas.
That's all of my ideas, I guess.

Ancient Gem:
Currently almost useless, make it into a block and do this:
If the aether is ever added, surrounding it with water, and right clicking makes the aether come in, surrounding it with fire and right clicking makes the nether come in and, right clicking on the ancient gem block while in a mixed realm makes another blackout, and it turns into the regular world. If you right click on it while in the normal world, nothing happens.
Or maybe it could be used to turn parts of the nether into the normal world
