a.k.a. : Changeling, Shape Shifter, Etc.
After a bit of searching I only came up with camouflaging creepers and mimic chests, so I might as well throw this idea out here as well.
In brief: A neutral mob that looks like other mobs.
In detail: Having a neutral mob that uses the exact body type and texture of the other standard mobs with only a blank generic face being the difference. Using the same texture file prevents players from simply reskinning to make the doppelganger easily identifiable. Instead, the doppelganger's own texture file would only include faces, one for each type of mob that it can spawn as, so that the differences in head sizes from mob to mob can be accounted for.
While it could be expanded to include hostile mobs, the original idea is for the doppelganger to spawn as either a sheep, cow, or pig, the face being the only difference. They act the same, they make all the same noises, and from most directions they look the same. If the player does not look before attacking to check if it's a genuine passive mob or not, it becomes hostile and attacks, discarding the idle farm animal sounds in exchange for a screech of some sort.
Speed and attack strength are undecided as it's still just a concept at this point.

Would the doppleganger gain any abilities that the mob it's imitating has? (chickens "float" instead of fall, etc.)

Hmm... "Abilities" would be the same as whatever it looks like, as it would move exactly like them. Swimming squid, floating chickens, etc. I kept the original idea to only the three generic four-legged hopping mobs since they are the most similar and would not run into this issue. If expanded to include other mobs such as hostiles, I imagine it would still move like them, but not attack. So creeper versions would not explode and skeletons would not have bows.
Since they are passive, not hostile, they fall under the same category as wolves and zombie pigmen, so they would probably still spawn on peaceful. But perhaps not.
As for drops, I'm not sure. I don't want this suggestion to also include adding new items, so for the time being let's just say it drops the same item as the normal mob, but perhaps a higher drop rate. Like three or four pork chops from a pig doppelganger for your efforts.

I think a doplleganger whic mimics you and attacks you with your own weapon and wears whatever armor you are wearing would make a great duel. But they would have to be extremely rare

An interesting idea, but this would require copying people's skins, and I don't know if that would cause problems or not.

Hmm... "Abilities" would be the same as whatever it looks like, as it would move exactly like them. That is the general idea when attacking a neutral mob, yes.
