That could be fun, I've always thought it would be nice to have more forms of transportation in Minecraft (as long as they're not cars, planes, etc.). However, there should also be a recipe for the things you use to propel yourself when skiing (don't know what they're called), which would be required to use the skis, and would be something like:

Only cross-country skiing is lame. Cross-country running, however, is not.
Cross country skiers don't really need poles, though they are useful. This would be pretty cool for snow biomes.
Maybe it would put you at, say, 1.5 normal speed.
I am Norwegian. 50% of all the world's cross country skis are sold here. I assure you, staves are essential in cross-country skiing, especially for professionals.
