This is a very simple suggestion, and since I am on a mobile internet I cannot really google well for it.
For now, let there be 3 size types for each type of passive mob.
Small, Medium, and Large
Medium would be the default size for the mob. It would be the most common.
Small versions of that mob would be occasional.
Big versions of the mob would be rare.
I think this would add some diversity to the minecraft fauna.
"How much bigger than medium would "Big" be?"
Approximately 1.5 to 2x the dimensions.
How much smaller than medium would "Small" be?
Half the dimensions.
How much less HP/damage would small mobs have/deal compared to medium?
Half the damage and health.
How much more HP/damage would big mobs have/deal compared to medium?
1.5 to 2x the damage and health.
What is the benefit of having different sizes, aside from looks?
Gives a sense of diversity. Small mobs would give a sense of 'babies' while large would give the sense of alphas.
If each had a different skin, would allow texture maps to create more diversity in the fauna.
Larger mobs would give a little more challenge, and smaller mobs would be able to be killed quickly.
A new challenge for builders where they have to prepare for small mobs entering their structures.
Would allow for bigger and smaller pet wolves. Essentially puppies and alphas.
Would allow for big pig mounts.
...so not much more then looks.

Smaller mobs could fit into smaller places. 1 one block opening could let in a small spider or ghast.

A large skeleton could possibly ride a small spider.
Bigger mobs are less of a problem. Them being more bulky means they cannot enter into places their smaller counterparts can. A bigger creeper would have a slightly bigger explosion, but that is to be expected.
Is there a way to solve such problems if they were to occur?
People would have to design their buildings to account for smaller agressive mobs.
