I think that for realism mode, there should be more realistic gathering. That means mining, woodcutting etc. Right now, you hit with a pickaxe like you are using a Charger arm and taking steroids. It should be slowed down somewhat.
Woodcutting would have the same principles. Look at the MineColony mod's lumberjack's cutting speed to see how fast it could go.
Efficiency could also be changed. Now that you're no longer on steroids, it would take painstakingly long to mine. So, let's say mining and woodcutting would have better efficiency to make up for lack off speed, once again, MineColony is a good representation.
You can chop down a tree in less than an hour in real time.
It takes a few seconds in minecraft because a Minecraftian Day is significantly shorter than a real day.
At 20 minutes long from sunrise to sunrise, a Regular Day is 72 times longer than a Minecraftian Day. That means every Minecraftian hour is roughly 1.2 real time minutes, assuming my math is correct.

That doesn't explain why there is reanimated undead, and giant spiders, exploding penises, and other animals move at normal speed. And that there is a replacement for electricity.

It's a game.
If you're looking for that level of realism, though, you can go play GMod Stranded or even better yet, GMod Stranded RP.
If you want to talk about how all the strange creatures are unrealistic, have something about it in the OP. The person you are arguing with is saying that the woodcutting and mining times are realistic to how long the minecraft day is. You are trying to counter that with a completely unrelated argument.
Either talk about how creepers and skeletons should be changed in the OP or argue the point he is making with something relevant. This is the equivalent of the current Argument:
OP: I like Family Guy more than The Simpsons
Counter Point: But you got to admit, the Simpsons has their own brand of humor and has been successful for years, and is still successful.
OP's counter point: Yeah but they eventually got to Super Saiyan 4 in Dragon Ball Z, I mean it's all TV right?
Seriously.

What do you think?
It isn't realistic. Think of:
1. Blocks floating
2. Blocks making up the world
3. Being able to survive with nothing consumed
4. Being able to punch down trees
Just to name a few.

Like I said... look at MineColony's speed.
