You see, I was disappointed on my first day on Mincraft that there werent any rivers whatsoever!
I stand before you and sit behind you to tell you something I know nothing about. Well a river block wouldn't work like a normal spring block. There would be a source block at the very top, and it would cut a trench about 1 deep to a lake or ocean. But the farther it goes, the wider and deeper it gets. Also, small waterfalls and such may be an interesting idea. It would add more fun to the game atmosphere. Not to mention a new set of creatures unique to rivers.
Future uses
Well since Notch meantioned realisitic mode people have been argueing and coming up with ideas for fresh and salt water. LOOK NO FURTHER! I have the solution to your problem. Its simple. Take water from the river. But thats not all of it. You see the water probably gets dirty near the end or in the middle. Theres many fish in it, and dirt and silt. Yuck! So you have to take the water from the spring, making water easy to find, yet not TOO easy.
Im thinking that fresh water in a bucket would have a certain transparency to it.
Creatures of the river
Crayfish- Ive been waiting to mention this forever. A crayfish would be a VERY small mob. About the size of a bottom half of a small slime. It would randomly wander up and down the rivers and hide among water plants (Mentioned later) It might kind of look like a lego scorpion. (Look it up) To catch it, maybe some kind of cage or net. If you caught them they can be eaten for 1/2 hp normaly and 1 cooked. Cooking one would be EXTREMELY fast, maybe 2 per stick. Thats 24 per coal. 400 per lava bucket. And, it would be stackable to 64.
Leech- Hey why not. A leech would cling to rocks and water plants. It would stick onto passing fish for a minute or two before it falls off. If it clung to the player, you would take 1/2 damage every 5 seconds for 30 seconds. Thats only 3 damage. Not a problem at all on peaceful, but on other difficulties... It would look like a black slug, bigger at the mouth which is pretty much a big red circle with 2 big white teeth on the top and bottom of its mouth. No eyes. It would be like 1/4 of the small slime, but would grow bigger, getting as big as a fish. Also more then 1 can cling to you at a time, so watch out. If you catch on fire/take any fire damage, the leeches will fall off.
Fish- An actual mob instead of an entity. Fish would swim around up and down. Heres the cool part. They would be similar to trout in that they lay their eggs in gravel beds near the top of the stream. After a few MC days they would hatch and begin to grow. After an MC week they swim to the ocean, fully grown. Then the cycle starts again later. They would eat water plants (Explained later), and small crayfish and leeches occasionally.

I'm content with rivers, and the fish we currently have. The mobs you suggested.. Nah. Lobster would be pointless, and as far as I know smelting times cannot be changed.
