While I have full confidence that Notch and company has a vision for what they want Minecraft to be, that still doesn't stop my brain from thinking up little ways to change things/make them better (Depending on your point of view.) I figured I would offload those thoughts here, in a short and non-detailed way. (Notch stated that long, detailed ideas discourage him.)
1:
Sleeping in a bed currently resets whatever determines weather, so people who use beds often sometimes never see weather. Sleeping should have a chance to make it automatically rain/snow, so as to simulate time passing.
2:
Automatic Item Collection Block. Acting as a kind of chest, any loose object that comes in contact with this block is instantly stored. Mob harvester that auto-collects your items?
3:
Different approach to hunger. Instead of required daily eating, mining and building could reduce your "stamina." Eating replenishes this stamina. No stamina? You can't mine or place blocks, and you move/fight slowly. This is similar to how it works in the classic, Harvest Moon.
4:
Separate crafting blocks for different kinds of crafting. IE: Woodworking bench, Leatherworking bench, Blacksmithing bench, Alchemist's bench, etc.
5:
Dungeon Superstructures. Dungeons that are a procedurally generated complex of rooms and corridors, to make them more dungeon-like.
I'll stop there. Feel free to add any comments, or not.
Edit: Herm. This is embarrassing. I probably should have read the rules first. One suggestion per thread. NP. We'll let this die, and I can rethink my approach.
hunger is a bad idea -
Minecraft does not in any way obstruct you from food sources. It will simply become anotehr unentertaining chore, to put crates full of bread and meat in all fequently used lcoations.
Expanding the dungeon idea a bit - MC team could hire some of the better builders in MC to recreate different famous objects - for example Machu-Picchu ruins, Minotaurs labirinth, Pompey ruins etc. These objects would be randomly generated in maps but would be hard to find.
It would add some interesting aspects for exploring (I mean.. currently exploring is absolutely unneeded. The only exploring needed is to set your starting point. All work is done in relative closeness to starting point from then on.)

It is a bit far stretched and should be thought through more carefully, but some maps or clues for such exploring objects could be acquired (for ecample by dumping loads of diamonds in some device or reading the sun/stars in particular way (of course you would have to learn it somehow, it wouldnt be imediately posted here as a hint) blah blah
True, but that is going to be on the hinted "Realistic Difficulty". A difficulty I personally won't use because that is just irritating.

You have 741 posts... you should know better. Flesh these out some more... you have some nice sounding ideas... but more detail would be nice.
