Most of the mobs have been around ever since the beginning of Minecraft, but they have never been updated. I don't mean damage or health changes, just the way they look.
For example, the cow has a flat face, along with the pig, squid, Creeper, skeleton, zombie and spider. In comparison, the chicken, wolf and sheep all have some degree of dimensionality to the head.
What I propose is that Notch tweaks the mob models so that they all have facial features that stand out. It would require a minimal change to the skins file and could be bundled with a future update to save time.
Now the cow has a nose, the pig has a nose, the squid has eyes that stick out, etc.

Why? What's wrong with the models the way they are now?
Not all of the models should have facial features.
They should only have them when necessary.
There's a reason why the wolf and chicken have facial features and the others don't: Wolfs have muzzles and chickens have beaks. Both features stand out enough for it to be necessary to make them "pop out".
Pigs, squids, and all that stuff you mentioned don't have any facial features that stand out enough.
