You could have rubber come out of rubber trees too! (no rubber trees yet but maybe in the future?)
I actually think oak trees should also give you syrup. (or maybe just sap)

Right. Rubber trees don't exist, but I looked at some pictures of rubber trees on the internet, and they look a lot like the existing birch trees in Minecraft. I'd say just make rubber come out of the birch trees, and say they were rubber trees all along.

I don't want things to get too complicated. I think one item should come out of each tree, no more and no less. But that's just an opinion.

Only issue is that would it be worth it to consume a bucket, made of 3 iron? Just to make yellow glass and armour?

I'm not the best at balancing these things, so I can't say for sure if it would be too expensive. But I also thought that recipes involving buckets of stuff usually give you the bucket back. I assumed you would be able to re-use the bucket.

I think you are going to love my Survival Let's Play series on YouTube! It's called Spaceboot1's Garden. I make pretty things.
Syrup? Trees are abundant. It wouldn't be an alternative, it'd be making sugar obsolete.
Hmm, might need a different mechanic than infinite clicking. But the cost is supposedly the fact that you need a bucket.
Yellow glass? Meh. Why? I've seen yellow glass. It's hideous.
If it's hideous, that's why I want it. I want to make horrible-looking scary structures.
Also, coloured glass is a really common suggestion, and this is one way to do the yellow kind. Sort of like how there are several methods and materials in the game to dye wool, depending on the colour.
And no new armor. Kthnxbai.
You're telling me you don't like the idea of rubber boots? Rubber batman nipples?
Okay, so rubber armour needs some thinking. Maybe it's waders. Maybe rubber boots and pants, combined, let you move full speed while wading in water that's no more than one square deep.

Birch trees (re-imagined as rubber trees) should give rubber, which can be used to make black or blue armour.
Pine and spruce trees should give amber, which can be fashioned into blocks of yellow glass.

Oh and don't forget pie.

and syrup, to make pie, would be harder considering the cost of three iron, and you would get more health from it.
