Well, I thought this guy up on another forum, but for those who didn't bother to go on "Undead Variants" then here it is:
Skeleton/Skeletal Centurion
it would have a 25% chance of spawning in the place of a normal skeleton.
Its health is 6 hearts, and has 20% a chance to spawn with an iron chestpeice/leather chestpeice and a 30% chance to spawn with a leather helmet (25% for an iron helmet), and a 5% chance to spawn with both. (2% for iron chestpeice and iron helmet
It will normally spawn with chainmail. (but the skeleton's chainmail is weaker than the actual set).
It would wield a golden sword and hits for 2.5 hearts (4 on hard) It can also shoot flaming arrows at will, it works like a player-made fire arrow (ignites the block/player/mob on fire).
It can drop an iron ingot and a bone. And has 15% possibilty to drop a bow.
Any comments?
A little too over the top for it being a 25% chance of spawning. Take some of this stuff like the chances of wearing armor and using flaming arrows and just apply it to the regular skeleton and I'll be much happier. That way you get more variety out of a single mob instead of creating a whole new one.

Skeleton Centurion Spider-jockies.
They have a 5% chance of being in the place of a SPIDER JOCKEY. (so the chances of encountering this guy is really rare, unless your unlucky and get spider jockeys all the time, resulting in a few centurion jockies)
The skeletal centurion looses the ability to shoot arrows, and instead hits you with his sword, he will only spawn with the weak chain-mail, and the spider gains the ability to shoot webs at you (works like arrows, nothing that speacil)
Spider: melee 1 heart, web 1.5 hearts (hard is 2 hearts, 3 hearts)
Skeletal Centurion: melee 3 hearts (hard is 4 hearts)
Also if the web misses, it will shoot a web on the ground, if the player runs into this it will immobilize them for 2 seconds, then giving them a 15% speed reduction as long as their on the area (covers 2x2 block radius)
The skeletal centurion has same health as normal, whereas the spider he rides has half the health of a normal spider.
The skeleton will burst into flames during the day, once this happens, the spider will stay a weak spider (less health)
Also the centurion will drop a stone sword (5%) or a chainmail vest (3%) it will always drop 1-2 bones, and the spider will drop 2-3 string. Don't rely on these guys for a super string source-chainmail vest source or anything like this
