I like the idea given by Randomer9 but potatoes should heal 5 hearts at most. I would say 3.5 hearts would be the best since you would be able to farm the potatoes.
Hmm... Potato farming sounds like an interesting idea. How to use them, however, that's an area which we'll need to give a bit of thought.
Maybe make raw potatoes only of use for growing more potatoes. To be able to get any health out of them, put them on the stove (furnace). Afterwards, they could be combined in crafting to make various meals.
I'm just throwing out ideas here, so feel free to discard any of them if they're overpowered or useless.
What can we do with the potato, obviously it's edible... How much food does it heal?
Can you boil it? Mash it? Stick it in a stew?

2x Cooked Potato + Bowl = Mashed potatoes (3 hearts)
Cooked potato + water bucket + bowl = Potato Soup (2 hearts)
Cooked Potato + egg = Omelette (2 hearts)
2x cooked potato + wheat = Potato bread (3 hearts)
3x cooked potato = 9x chips (1/2 heart each)
Mashed potatoes + Mushroom stew + 2x cooked porkchop = full meal (full health)
