With the addition of specific sapling species, the very first thing I did was go find a pine tree and plant one in my base just so I could have a pine tree, because they're kinda rare in my world. It got me thinking; perhaps it would add something fun to the game if there were many tree types, some of which were very hard to grow and/or find.
Currently, we have the standard, which I think might be supposed to be oak, and birch, which shows up randomly where oaks are, and pine, the standard of snowy boimes.
I think some more tree types that only appear under specific conditions would amplify the fun in importing and growing "exotic" trees. For example, ebony, with a different, cooler skin, and only special spawn conditions in rain forest biomes, or redwood patches as a rare feature of certain forest biomes.
From there, I think it would be neat to have different properties for different kinds of tree and wood. The aforementioned redwoods would grow unusually tall, or perhaps a sequoia instead that grows more than one block wide as well. Variations in burn rate, growth time, harvest time, and explosion resistance would give wood choice a little tactical meaning too. You want a wood house that hardly burns and barely shows a dent from a creeper blast? Go on a quest for the mystical and rare lignum vitae tree, or whatever.
It might require a redesign of how subclasses of block work (different wood, colored wool) to have so many differing properties, but changing that would probably be worth it anyway.
I'm not particularly attached or opposed to any specific trees. Willow sounds good enough, and could probably add something interesting by making sort of a hollow dome of foliage, big enough to walk around in a little.
The point would be to flesh out the world a little more and add something people can go out and find. Wouldn't it be cool to find a redwood grove? I don't think there would be anything wrong with fruit trees, either.
i think its a great idea, mainly because i feel like the more that is added to the world and brings it to life more, the more fun it will be in the long run. its the same reason that more types of stone would be cool. your digging down and hit a patch of limestone and your like, cool!. variety is awesome. good idea.

Unless there was a fruit tree, or a coconut tree (coconut bra armour? nah, that's silly).

Some glowstone dust trees in the nether would be cool IMO.
