We have clay in minecraft, but right now it can only be made into bricks.
I was thinking for a bit and maybe you could make a pottery wheel with

now right clicking it would give you a menu with one slot on the left and several slots on the right.
On the left, it will only hold clay. On the right, it will produce pots, vases, pots of the chamber variety, urns...
Most of this is decorative. Vases should be able to hold flowers, because some people admire flowers for the aesthetic sense, but are unable to place them on their wooden table because wood is not dirt. Potted cacti become placable next to walls, but lose their ability to destroy blocks, grow, and cause damage.
Second suggestion:
Walking out in the fields of grass one day, you see two weird looking plants. You punch one, and it breaks, and is destroyed. Huh. So you leave the other one there, encased in glass, just to see what might happen. Sure enough, 30 minutes later, you come back, and there's a large flower in the glass. Excited, you break the glass open and attempt to mine it. It turns and spits at you. Darn. You run fast, but it can't follow you because it's rooted into the ground. So you tunnel under it and kill it with your trusty diamond sword. It drops an apple.
We have slimes that grow, initially harmless and easy to kill, eventually large and dangerous. This would be like slimes, except they only grow in dirt while exposed to light, and become aggressive only at night or when attacked.
Maybe pull a page from Larry Niven?
Unless you don't read him. Ah well. Sunflowers(his version) are pretty dang awesome.
Sunflowers only have killing power during the day time. They use metallic petals as mirrors to focus sunlight any where it's needed. In the novels, the sunflowers use this a lot: they burn away grass to spread their seed and nail birds and animals for fertilizer. If a cloud threatens to shadow a patch of the sunflowers, it doesn't last very long. It would be a nice way to bring deadly plants to minecraft, if used sparely.
