It seems weird that a slow moving gelatinous invertebrate creature with no completely solid base can be stopped by a simple 2x1 entryway.
Other than being a melee-only mob that spawns rarely, drops a useless item and break down into weaker versions of itself, it's kind of a waste and completely unthreatening. Perhaps Slimes can take advantage of their gelatinous body and be able to shrink/compress their body to move into smaller areas?
TL;DR Version
turns into
or
to get through narrow holes when chasing after you, and then re-expand when in an open area.

I think you might have forgot the 'r' in "shrinking" (at first glance it looked like a mistyped "Shanking Slimes".)
Slimes would be a good canididate for an enemy that could sneak through a 1x1 hole. They only spawn deep underground so they wouldn't be a constant nuissance to players.
I think this might be doable. Can monsters have their sizes/hitboxes scaled while they are still alive? If not, I'm sure that the mob could be temporarily replaced by another one (saving the current health.)
