First i will start with disasters. Can't there be like tornadoes and earthquakes volcanoes and stuff. I mean we need SOME disaster to make it realistic.
Easy mode:
Small floods
Very rare wild fires(only plains)
SUPER rare lava flows (only on big mountains)
drought (no water and plants die)
normal mode:
tornadoes
tsunamis
unlikely wildfires (plains AND forest)
volcanoe eruptions
earthquakes (shakes underground and messes up terrain)
monster uprising (ALOTS of monsters come up)
Hard mode (rlly gets bad here):
Freak waves
alter volcanoes (must sacrafice animal or else volcanoe will erupt much more bigger)
hurricanes
common wild fires (plains forest AND jungle)
sandstorms(cant see and only in desert)
meteor shower
Optienal disaster mode(you dont have to have these)
black holes
alian invasion
void holes(holes appear in ground leading to void)
void black hole (when sucks you up takes you to the void world which is the same but all negative colors and you lose twice as much health and cant build only way to get out is to wait for another void hole)
chaos disaster ALL DISASTER HAPPEN
doomsday (happens after 3 real months and everything turns black and dissapears and you die then you respawn on a fresh new world)
I like some ideas, only gold for you.
I think some things could be different, but some ideas are a bit far-fetched.
The monster uprising is a good idea.

I think on hard mode there should be things like vocals and some Tsunamis/tornados, but not something disasterous. I had an idea that easy/normal would be based on mobs, and hard would have disasters like this. If you want to go deeper, add diseases that decrease animal spawn rate and increase zombie spawn rate.
Notch already talked about making a realistic mode with hunger and stuff, Im sure he's already considered disasters in it.
The farthest I would go with this would be small floods after a rainstorm in which I believe their planning on implementing. (rain not floods) Plus that would just be insane to try to put in minecraft

Try fixing everything that's not realistic first.
Must be trolling, I mean, the "Optional" disasters are just plain silly.
