One: Randomly generated small caverns that have bears in them. These bears would not attack unless you actually entered the cavern. They would not be common, but not exactly rare either. If you encountered bears outside of a bear cave, the bears would be neutral.
Two: Beehive blocks. These blocks would give you honey when destroyed, and the honey would restore four hearts, or somewhere around that. The blocks would have to be somewhat rare. They could also be targets for the bears mentioned above. The bears could also go for beehives and destroy them to get the honey, kind of like how wild wolves attack sheep. I don't think having actual bees to guard the hives would be a good idea, but that's just me.

I agree on the mob "BEARS",Maybe they live in like grass caves, on the face of a mountain/hill?
And the Bee's,that would be cool.. honey= food, the beehives are in trees, bee's attack you if you attack their hive, ect?
