Note: I'm 100% sure this has been thought of already, so don't tell me this is old. I'm bringing my own interpretation of how these might be done if at all.
Alright, I've been stewing this idea in my head for a while now, and I've thought that adding paved materials (i.e. asphalt and concrete) would be cool to do. However, beyond this, I've also thought of ways that it could be accomplished. First, let's start with asphalt.
I have two theories on how to make this, though they are essentially identical minus the materials needed to make it.
The first method involves the addition of a new (sort of...) liquid, being tar. It could be found in small "pits", possibly only in hotter biomes (desert and raitforest withheld), and collected like other liquids in buckets, which would be one thing making this more costly, as many know buckets are rather difficult to gather. But, continuing on tar's properties, it would be very slow to flow, maybe four times as slow as lava if not slower, but each flowed block could count as a harvestable "spring block" to make the relative difficulty of finding tar a little subverted in the proccess of creating asphalt. It would also slow your speed in a similar method to soul sand, and possibly even slowly suck you down (resulting in suffocation if stuck underneath).
The second method, which is more realistic but probably not quite so easy to figure off of basic knowledge, involve creating petroleum from coal; a method I'm not sure on how to accomplish, but could always be formed by crafting a few peices of coal or smelting a peice of coal. This petroleum would be easier to find as it's made form an abundant resource (coal) and can also be independent of buckets, both advantages over tar.
From this point on, both methods are about the same. Essentially, you need to first put tar*/petroleum ( ) and gravel in a crafting grid like so:

This will give you unrefined asphalt, though the name may vary. Finally, stick this in a furnace to get an asphalt block. *Buckets that held the tar will be returned.
Second, concrete will be much easier, though currently also requiring buckets as per my current plan. Essentially, you just need to craft concrete mix, using sandstone ( ), clay balls ( ), and a water bucket ( ):

[] [] (It's possible that this same grid could be used sans water, as long as the crafting bench used is either next to/on a block next to a water source to yield the same results without the need of iron to save materials and time.)
This concrete mix can either be set out to dry over a day, or smelted in a furnace, each yielding a concrete block but the latter being placeable (and craftable into half-blocks, as well). The clay could also be replaced by a number of other things, e.g. gravel, stone/cobble, etc., but clay just feels somewhat more... right, IMO.
Now, you may ask, why all this work for this? Well, essentially, what I'm thinking for these blocks is (beyond aesthetics, of course) is to give you a boost in walking speed when on these blocks, anywhere from 1.2x all the way to 2x, and possibly a greater speed for one over the other (and, if vehicles get introduced in the future, possibly a boost for vehicles on asphalt, as well. This would save a lot of time crossing long distances (in the Nether especially so!) and could also allow for more modern-esque cities to be created and utilized efficiently, and would add a new element to the game (well, withholding minecarts, as they (though faster) take a lot of processed material to utilize in larger-scale, as opposed to cement or petroleum-asphalt).

this is a pretty good idea, i have always wanted a new building material that looks better for giant bridges and other stuff. EDIT: i like this idea heaps!
