When (or if? I hope it's when) realism is implemented in Minecraft, there should be a weight system for each block. The amount you can carry depends on how much health you have, at lower health levels you can't carry as much until you sleep or eat to regain health. You still have your inventory, and you can fill it up with blocks and such, but some blocks weigh more than others. For example, a gold ingot weighs more than a dirt block. Your base limit for items would be 100-200 lbs., or somewhere in between. There would be no limit to the amount of items you can carry aside from your inventory size, but the more items you have above the amount you can carry, the slower you get, until you stop completely, which would probably be 100 pounds above your weight limit. Now, we get into another use for Saddles.
If you have a tame wolf with you, you can craft an item called a Saddlebag, crafted something like this:

When you put the saddlebag on a tame wolf, it has its own inventory which you can put items into. The wolf would have no weight limit, but the farther you go, the slower it gets, until you give it a porkchop and lead it to a pool of water, where it hops in and out, and then goes at regular speed, repeating the process over and over. This would be a toggled feature with Realism mode, it would be completely optional.
And yes, I did get the idea from TES IV: Oblivion.
Ok, but Minecraft is a sandbox type game, that just so happens to have a fun zombie onslaught to add more of a point to the game. It isn't an RPG. This sounds a lot like playing Everquest, Fallout, etc.
The saddlebag is pointless, as most people who play minecraft prefer to make bases to stay in. When they wish to move to a new location, they take trips, ringing all their stuff along. This added difficulty in relocating is essential. If I could just up and wander the world of Minecraftia, without even a thought of how I'll bring my stuff along, it wouldn't be as fun.
Also, how would I access the wolf's inventory? Right-click is already bound to making the wolf sit and stay where it is. I would hate to open the inventory, causing my dog to sit, get the stuff out, close the inventory, then have to reopen so wolf stands back up.
Decent idea for the Modding forum. Try reposting there.

I already said that this would be toggled with realism mode. If you didn't like it, you wouldn't have to toggle it.
Also, it's not like any of the stuff on this forum will be looked at by Notch. All we're doing here is sharing ideas with each other. Realism mode would be less of sandbox, more of survival.
I don't think a wolf should be your pack mule, and if you insist, then it shouldn't carry 2 chests worth of stuff, and if you insist, it should be slightly slower than the other wolves all the time, and still attack mobs so it has a chance to die.
Obviously, the devs have an idea of the posts that occur here. Otherwise, they wouldn't be considering the Aether for inclusion, nor would they be adding pistons within the next few updates.
