I think a good way to fix this is that if there was a 1x1 tower that was 20 blocks or more, it would be unstable, and might collapse.
That might work, but I'd suggest instability begin at perhaps a 5 block height. It's just too much of a "cheat" to build towers in a few seconds to survive a night and have a panoptic view of all threats, than to have to invest time in a shelter and not know what's out there waiting the next morning.
If you don’t like it, DON’T DO IT. It’s that simple. You’re like all the people complaining about “tak out redstun cuz i dun unnerstadn!!!” or “wolf ruin miencraf!!!”. If you don’t like to pillar, DON’T PILLAR. Would you like it if vegans got a worldwide ban on the eating of meat or any other animal product, because they personally don’t like eating meat? Or if the Amish got all electrical technology banned, because they personally dislike it? Your problem is your problem, not ours.

OP has obviously never built a tall structure or floating object.
As for the 'tower instead of shelter' thing. Keep in mind that if you do this, it also means the player is stuck on top of a single block or small platform and basically helpless and unable to do anything for the next ten minutes of game time until the sun comes up.

Besides, your main complaint is that you can make a shelter for the first night just by making a little tower. But you can make a shelter for the first night by digging a 2x1 hole in the ground and covering it with a bit of dirt! Are you next going to suggest that we should remove digging, because that makes the game too “easy”?

I believe that ability ot make a simple shelter also ruins the survival gameplay. I'm looking forward to the rumored Zombie Seige some mobs having the ability to destroy blocks.

So...what happens if you fall down a hole? how will you get out? If it is lined with stone, what if you don't have a pickaxe? What if you are building a structure's roof, and you fall off, so need to get back up again? It will make things like this much harder. And besides, as has been said, you can just dig down 3 blocks and place one on top, which is much easier than towering, and neither are fun as building a shelter, that's why people build shelters anyway. If you don't like towering, just don't do it.
I really can't think of a way for Notch to fix this. He could implement the idea of the tower collapsing, but then players would get around this by building a 1x2 tower. And plus, if he did include the idea of 1x1 towers falling, that would make building all actual towers (skyscrapers) a BIG pain in the neck. Its a mediocre idea, but sadly there's nothing Notch could do to fix it.
If wind was added it would fix this. You could get blown off to your death.

You can't get down or you'll explode.
If the pillar is sufficiently high, perhaps 15-20 blocks, the mobs don't detect you and don't congregate at the base. Such easy avoidance of mobs diminishes the survival aspect of the game.
Minecraft is played how you want to play it, so if you want to "pillar" than go ahead... why should you care if somebody you don't know who your not playing with is pillaring.
Minecraft is more a game about self achievement than anything else. Who cares if other people do it. Plus if you make that impossible some of the structures people create wouldn't be possible anymore. I don't know about anyone else but I love building crazy crap with monsters running around. I don't like the idea of modding to carry over 64 items in a slot or editing your inventory so you don't have to search for stuff. That's why I don't do it. Do I care if others do? Nope.
