The assimilator is a new mob. Unlike other mobs, it has no ability to start with, other than the ability to absorb abilites.
How does it work?
Very simple. When the assimilator moves over a mob, floating/broken block, or a specific item, it will assimilate it into it's body, and gain some of it's properties.
Can you give me an example?
Sure! If an assimilator walks over some saplings you left behind after felling a tree, it will have the texture of a branch of leaves. If it walks over a rose, flowers may sprout upon it.
Wait... what happens if it assimilates a mob?
It depends on the mob! If a passive mob is absorbed, the tail of the latest absorbed mob will appear on the assimilator. If, however, a hostile mob is absorbed, the assimilator WILL become a hostile mob.
So, what items do what?
= Becomes covered with roses = Becomes covered with flowers = becomes partially transparent = On death explodes (sapling) = Becomes covered in a leafy texture, a falling leaf animation follows the assimilator, becomes less resistant to fire becomes covered in a wooden texture, becomes less resistant to fire = Becomes hostile, explodes on death = Gets a pig nose, a pig tail, and a pink tint = gets a falling wool effect behind it, a sheep tail, and the tint of the coloured sheep it assimilated
[cow] = Gains cow texture, cow tail, and cow nose = becomes hostile, gets a bow, vulnerable to sunlight = becomes hostile in darkness, eyes become red = becomes hostile, vulnerable to sunlight, gets a dark green tint = mushrooms cover assimilator, drops a mushroom every 5 minutes = same as portabella mushroom, but may inflict poison damage = regains health in water, = takes on a scarecrow appearance, is less resistant to fire
[pumpkin] = becomes hostile, gets a pumpkin mask = becomes grassy = gets the cobblestone texture, gains bonuses to fire and melee damage
It should be noted, the assimilator is grey upon first appearance, and only spawns on normal difficulty in complete darkness. It is not hostile, even when attacked, unless it absorbs a hostile mob. Due to it's power, it would a mob that could be toggled on/off.
This sounds rather convoluted for a mob; it's a "no" from me.
I respect your opinion. The idea of this mob is to provide a new style of challenge, rather than the 'swing sword down, riddle with arrows' type of gameplay.
Even if you don't like it, it could be toggled on/off.

Oh, btw. Does the Assimilator drop any items? Or does it count on what it has absorbed?

Oh, the pumpkin monster is nothing really. It just has a pumpkin face, like when you wear a pumpkin as a mask.
And yes, assimilators drop everything they have consumed, except for hostile mobs.
