So far all the dog can do is sit and attack on the players command which isn't much of a reason to actually go out and tame them so I've come up with a few more functionalities to the dog to really spice it up.
Right-clicking on the dog would tell it to stay. Simple enough but very boring. Additionally I think it would be better if by right-clicking on an NPC in the distance, the dog(s) would go out and hunt that NPC. Also a "fetch" function whereas if you right-click on an item in the distance, one dog would go out and get the item then drop it at your feet for you to pick up.
Pressing E on the dog would open up a sort of "options" window with different stance changes:
Aggressive - Dog will attack anything without being told to do so. When in aggressive stance and told to sit the dog will attack anything within a certain range and return to the point where it was told to sit once the target is dead. Being in aggressive stance changed the dogs eyes to red. Being in aggressive stance would also make it so the dog would play a growl sound when NPCs are nearby but out of range of attacking automatically.
Defensive - Normal dog setting, will defend you if you are attacked. Dog's eyes are default.
Passive - Will only attack when it's told to. Dog's eyes look relaxed as they do on a wolf that hasn't been tamed.
EDIT:
Fairly obvious but I just thought of this:

Changing the color of wool would determine the color of the collar. Upon creating the collar you would then have to right-click on whatever dog you wanted the color change to go on.
i like the collar idea but i feel like the dog should still do more then just attack and defend. maybe he could go out and bring back food. and no matter what he cant attack you
