Okay, we have lava and water, that's great and all, but I'd like more variety in terms of liquid blocks for aesthetics and other functions and hazards, for example, poison (looks like purple water) that infects a player when they submerge in it, and it does 1/2 heart damage every tick, but ticks 1/10 as often as being on fire, or swimming in lava. Another good one would be oil, which would cause the player to move faster on land for a few seconds after getting out of it, but causes double fire damage for the duration. Also, you could light the surface on fire.
I'd also like to see something else, maybe slime, which has a higher chance of spawning enemy slimes when found in a large enough volume, and causes the player to move slower on land for a set duration (much like soul sand) and reduces damage the player takes during the duration. While on the topic of slime, a use for the slimeballs found on enemy slimes could be used to coat walls and other structures, perhaps to protect the blocks from explosions (be it TNT or creeper).
The length of these effects could be based on time, or could be based on something else, such as jumping into water to wash off the residue. A new flower or plant could be added to counteract the effect of poison, as well. Also, when two or more liquids meet, whichever one has more adjacent source blocks could dilute and overpower the smaller ones.

The only liquid I can think of that would be amusing would be oil and/or tar, and with only one application. That being:
Craft it (some sort of coal + bucket + furnace thing that I can't figure out at the moment), get a bucket of burning oil/tar, and be able to dump it as a one time use. Falls like what you would get if you placed water or lava and then removed the source block, so it falls as a small 'segment' of liquid, spreads on the ground, and then flows away.
Obviously for dumping on mobs/players at your castle walls.
Edit: And hurts them, in case the implication wasn't obvious enough.
