I don't think there's really a singular item I want way more than others.
If I had to pick a current honorable mention, it would be (a) block(s) and that is White stone variant counterparts to the somewhat recent darker deep slate offerings. They could even copy the brick form from deep slate and stone bricks (then we would have dark, medium, and light greyscale options here) and smooth form of deep slate, and then either come up with a unique third type instead of tiles, or even copy those too. As long as there's some White bricks that match the aforementioned two, I'd be happy. Diorite is the only one White stone we have and it's not bricks.
The only other thing I want is less of a new block or item and more of a redesign of most trees. Mostly it's the ones that use the basic design like the small oak, birch, swamp (sans mangrove), and small jungle; the rest could benefit from improvements too but I don't think they are as bad off or in absolute need of a redesign like the "basic" ones are. The "canopies are in your face" forests are tired and old. They are supposed to be forests of trees, yet they feel like groves of overgrown bushes. The low canopies makes forests hard to traverse and restrict sight lines too much. With the new leaves (I just found out about the new stuff!), adding patches of dirt, fallen logs, and new tree designs where the canopies are higher would finish the world redesign that 1.18 already started. The original trees feel sorely out of place in modern Minecraft, and I also feel like the new leaves are good themselves, but they look bad in forests with full grass cover on the ground.
As a smaller thing, and maybe this isn't an "addition" since Bedrock already has it, but it'd be an addition to Java, and that would be for sheep to show their true color in their face and when sheared. This is soooo needed! They are mismatched White in the face, and completely White when sheared, for some reason and it's wild that after all these years that's still how they behave. The sheared part isn't even the one that bothers me the most but the face mismatch does.

Placeable ruby crystal formations like we have with amethysts.
Weapon:
The Macuahuitl. Imagine the paddle of a boat but the wide end that goes in the water is much longer going down to the handle with sharp obsidian edges going up the sides with a bit a space between each piece of obsidian. Being an Aztec weapon I think it would be cool for it to only be acquired via archeology in Trail Ruins. To spice it up it would also possess a unique passive ability that would briefly resurrect a mob you have just slain to fight for you for 4 seconds in the form of a sand spirit with a limit of 2 spirits being active at one time. This weapon would deal high damage, but have a significant delay before being able to strike again.
Tuff Golem (Bouncer Golem)
Tuff Golem but not the one from the mob vote. Made with Chiseled Tuff in the Iron Golem formation, but the middle block is a Gold block with a pumpkin on top. It'd be larger and taller for a more imposing appearance. It would both have more health and deal more damage than an Iron Golem, but would wander much less from it's spawn point of origin. It would however be attracted to nearby redstone signals which would allow players to give it a patrol route, or possibly fulfil a use for technical players redstone devices.
Just wondering

Block would be either Rose Quartz or Citrine Crystal.
Weapon would be a magic staff.

Yessss! I'm not sure what it might do (heal too!?), but yes... absolutely necessary...
