Much like the arctic fox, the fennec fox would only spawn in a specific biome. In the fennec fox's case: Deserts. Instead of being orange like the normal fox or white like the arctic fox, the fennec fox would be about the same color as the sand around it, allowing it to blend in quite well.
It would be nice to have a new mob to spice up deserts. Red and Arctic (snowy) foxes already exist in the game, and fennec foxes are one of the most iconic real-life species of foxes anyway, so I don't see anything wrong with completing the trio.
Assuming the fennec fox is added, though, we probably won't need more variants as foxes do not serve much purpose in gameplay apart from ambience, and in terms of mob variety most Overworld biomes are fine as they are.

Something that apparently works is if you give a Fox a Looting 3, Fire Aspect sword, and put it in a certain Chicken Farm setup, it will use the sword to attack grown Chickens, and you'll end up getting plenty of Cooked Chicken and feathers from the farm.

Using the ignore feature here is kinda weird.
