I think the idea of bears in their respective biomes is an amazing idea for Minecraft. Bringing even more diversity about animals to the game, for example finding a couple of bears in icy biomes like taiga or Taiga with giant trees.
I believe this would bring a sense of adventure to players by letting them keep or have these bears as pets in their homes.
Black bears, brown bears or some other species as different minecraft mods bring them, I believe this would be a great addition to the game.

If new bears get added, they'd probably work just like the Polar Bears. Can't breed them, can't tame them. When killed, I could see them dropping Fish, or a Honey block (Bottles of honey seem off, but so does the block as a drop). Maybe they can be an aggressive mob.

I don't see anything wrong with adding more bear variants to the game; brown bears in standard and old growth taigas and black bears in forests sounds reasonable. The only possible complaint is that those biomes will be more dangerous to be in, so they should behave neutrally (and unlike polar bears, not attack if you get too close to them or their cubs) and have low spawn rates. More general ambience is always welcome.
I'm not sure about taming bears though, unless you mean just trapping them in your base.

The polar bear already exists, and I think some other variants, like the common Brown and Black bears, would basically fit right in.

But "biome is in this state, so it can never change" isn't something I think should limit potential changes, as long it doesn't change it too much.
Making them relatively rare or passive are options. I think I like the first option a little more, partly because I think they shouldn't be too common anyway, but also because I think the range (using polar bears as a reference) is typically small enough that I don't think the current range and behavior would be a big change in difficulty or safety of forests if they were rare. Making them passive would seem a bit odd, unless you went with a system like the panda bears use (I... think?) to have random personalities, so maybe some are timid and flee, and maybe others are passive but then attack if you draw too close. Or maybe some are just curious and slowly follow you, chasing you up a tree? I'd have more of an excuse to treetop!

As said by the user Zombie Killer, it may make the biomes a little less safe, but the way you deal with these animals will determine whether they will be safe or dangerous. If you get too close they can end up becoming a danger, but just watching them and noticing their behavior would be really cool to see.

That's true, but as specified above the new bear variants will be neutral mobs, just like polar bears, wolves, etc.
Well, they might spawn as neutral, but turn hostile so that might affect the eligibility of them being added.
