In my opinion, I find the "Protection" Enchantment to be rather over powered and makes other protection enchantments obsolete. So I think vie come up with a small solution that could force the player to get the other enchantments.
Step 1. You will have to get a hold of a new block, the name could be something like "Fusion table" or something of the sorts, this table's main function would be to combine together specific enchants to make more powerful ones. This could also be the new way to increase enchantment levels but that's not what this thread is about.
Step 2. You will need to gather a specific material that corresponds to the enchantment, so if you wish to combine fire protection with projectile protection you must get both "Blaze Powder" and "Snowball" or something else that represents those enchants (Or maybe an item that represents both, like a "Fire Charge"). Different enchants will have different items designated to them, kind of like how potions need specific materials for potions.
Step 3. Gather an enchantable item (book, armor, tools) that are of the same typing (Helmets+helmets, Axe+axe, etc) with the enchantments you wish to fuse together. Make sure the lvl's are the same so that it also goes up in lvl instead of taking the highest enchant lvl.
Step 4. Combine all these into the "Fusion Table" and Poof you now have a fused enchant, once you have 2 books or armor with a combo of the 3 Protection enchantments(Fire, projectile, blast) fuse them together finally and boom, you finally unlocked regular Protection in which you are protected from most forms of attacks
I've always thought something like this should be in the game and maybe this "Fusion table" could also allow us to make lvl 6 or more enchants.

This honestly seems more convoluted than it needs to be. What they really should do, is make each Protection enchantment, more unique/desirable for its effect.
As it stands, Fire protection, at a certain level and with enough armor having it, makes you immune to fire damage from all sources, allowing you to pretty much swim in lava with no drawbacks. At least as far as I know. This could be entirely wrong and I'm misinterpreting it.
Projectile protection offers a little knockback resistance from certain projectiles. Again, I could be wrong on this one too.
And no one really ever goes for Blast protection because it's borderline useless, because it doesn't offer enough protection against the typical explosions you'd encounter.
If memory serves, each specialty Protection caps out at 60% resistance, whereas Normal Protection caps at 80% of all damage, but without the added bonuses the specials give.
If any of this is wrong, please let me know. This is all information I've remembered seeing from various Youtubers/Minecraft personalities.

Using the ignore feature here is kinda weird.
