Suggestion: Add a pen item, crafted with 1 stick and 1 ink sac, that can be used to edit signs. That way signs can still be edited, but only with the new pen item.

I love this suggestion, the addition of a pen to edit signs, would eliminate the accidental clicking on signs which take you to the edit prompt
Unfortunately, new features can cause undesired behavior in some circumstances. I know this all too well.
This reminds me of when stripped logs were added. I used to default to carrying an axe, and I would accidentally strip the logs I would often use for frames in builds (window or door frames, especially). I had to simply not keep my axe out by default.
Another example was when the ability to place logs sideways was added. A tunnel I started working on/finishing after 1.3 released had log pillars in it, and I struggled to place them because I kept placing some sideways. I'm not sure if there were later changes that made them more intuitive but I swear at times I had to stand nearly directly next to the block i wanted to place them at at look almost straight up or down to get them upright instead of sideways. It's very likely they had the same behavior on introduction they still do and I simply had to adjust.
For signs, you always had to break them to change them before. I'm not sure why hanging signs in particular warranted this change, but if they wanted to add this as a feature, which is nice mind you, it could have been done where a feather/ink make a quill and that can be used to edit a sign (and likewise, you could adjust the book and quill recipe to either be craftable as it is now with all three outright, or with the new already crafted quill combined with a book). My guess is they didn't want players complaining about not being able to use the new feature to edit signs by needing to have an item on them, instead of being able to do it innately. No matter how they implement something, someone will complain and others won't, and vice versa if they do it another way.

Can you change the signs back to where you can't click to change the the text because when I try to open my named chests I keep clicking on the sign
This change is bad for compatibility but all you can do is change your layout. Mojang won't reverse this change easily.
