Here me out here, Add tin that spawns like copper but drops 1-2 ore instead and maybe a bit deeper than copper.
How to get Bronze:
-Step 1: Obtain 3 Copper Ingots and 1 Tin Ingot.
-Step 2: Craft 1 tin in corner with 3 copper surrounding the tin. This creates Bronze Mixture.
-Step 3: Smelt Bronze Mixture.
Possible Tools / Craftables:
-Statues:
Required blocks: Bronze Block, Mob Head.
Recipes: Use Armor template but with Mob Head included for parts of the statue
Each piece would be a block tall making the Statue 4 blocks tall.
Could even make it so you could craft statues out of different materials.
A full statue would require 4 Mob Heads and 24 Bronze Blocks
-Plaque:
Like a sign but made of metal. Materials: Copper, Tin, Iron, Bronze, Gold, Diamond.
-Knight Armor:
Purely Decorative with same defense as Iron.
-Tools:
-Mace instead of sword.
Crafting Recipe: 1 stick in bottom middle. then 4 Bronze in T shape above stick.
-Shield: More decorative but higher defence.
Possible to add other tiers of shield.
-No Standard Tools (i.e. Pickaxe, Axe, Shovel, Hoe)
-Possible Expansion of Armor with Diamond and Gold. What I mean by this is take Bronze Armor into the crafting table and add 3 Diamonds, Gold, Lapis, Or Glowstone above it. Thus adding slightly higher defense but also making it stylish armor / fancy armor. Maybe also to Horse Armor. With the glow stone add on though, it would emit a small amount of light from the character. The Gold added to Armor would trigger zombie pigmen.
These are all just ideas but I'd love to see more done with Copper. So many possibilities.

-Chicken Stew(Carrot, Potato, Cook Chicken, in a Bronze pot or Copper Pot. Creates uncooked stew, then you have to cook it, you get the stew, which can then be divided up into bowls, 1 pot making 4 bowls, then you get the pot back)

Why add uncooked stew using a new "workstation". (Block with function)
This could be an addition to the campfire, providing cooked food instead.

Maybe adding villager behaiviour (not jobs) to theirs visible dayly routine.
I don't see a balance issue since you didn't mention any benefits or debuffs.
It's just a new food that requires a workstation, which also needs to be cooked in a furnace / smoker afterwords or did i miss something?

Bronze statues I'd definitely want added into the game, but how exactly would it be done? and what size are we talking?
I agree it should require a mob head of some sort to get the shape for the statue the player wishes to build.
But how big or small can the statues be maximum? 4 blocks tall? 8 or 9 blocks?
this gets tricky.
We would need a whole new crafting table that is exclusively for statue building,
just as the loom table was intended for banners, we could have a sculpture table added for statues to be possible.
I'd suggest allowing these statues to be up to 8 blocks tall, and 2 blocks wide.
And be craftable not only with bronze, but with other metals too like Iron or Gold.
They could also all serve a similar purpose to lightning rods, attracting lightning but obviously being much more costly to build than lightning rods.
Both banners and mob heads could be used to determine the shape of each statue on the Sculpture Table,
as well as the patterns/texture they have.
