I'd like to see it in case if ordinary snow made you sink in, to make the player affected both negatively and positively (depending on equipment).
Otherwise - not really.
I wouldn't say it's logical to add skiing. Especially since minecraft doesn't have "curves".
But this could be a fun idea. If the boat on ice thing would get patched, skis could take that place.
If they will be added, i hope they don't get enchantments.
There are enough enchantments already and i don't like the enchanting phase of minecraft.
Jumping in skis is still a thing.
Besides, boats skim on ice and not snow.
If it was fixed then the logical successor should be ice skates (metal blades affixed to bottom of your shoes), not skis (long wooden planks strapped to tips of your feet with metal).
