[i was discussing a potential update with someone in the comment section of a minecraft-related youtube video, and this is what was discussed.]
Minecraft needs a “siege and cities” update where randomly generated castles and cities full of villagers and even a villager king/Queen. As well as pillager castles.
Maybe even trading caravans travel in between those castles (and maybe villages)? Like they really travel the map in real time.
This way, it adds a whole lot of new ways for players to the game, and would give a deeper and meaning and use to the villagers (like cmon the villagers have been the same since their implementation)...
Players could now interact with the villages on a deeper level. Since their only real function is to trade why not expand on that even further by allowing them to interact with the outside world of minecraft by having trade relationships with other villages and players alike.
If you want, you could intercept the (wandering traders?). Or, maybe you're not that kind of minecrafter and decide to manipulate the newfound REAL economy in minecraft (which, by the way, is currently useless with useless emeralds and is boring and semi useless) by fuelling certain villages or castles with emeralds by purchasing merchandise or selling many items and allow them to prosper (and grow). Either way you do it, this would change MULTIPLAYER as well.
Perhaps a nearby clan wants a certain resource that a certain city owns, which is currently being protected by you and your batch of multiplayer friends. How can they acquire that resource? Maybe they want to besiege it.... Maybe they could raid that cities trader caravan on their way to another city, and possibly more.
You can just see all the possibilities this would add to Minecraft, on singleplayer AND multiplayer alike.
Obviously not all castles have to be occupied by villagers. some would also be empty, either abandoned or razed.
Call it too ambitious, but i think this would be really fun and add so much more to minecraft.
This sounds more like Civilization, not Minecraft. Not to mention all the complications that would come with making villagers/villager-like mobs this dynamic.

If you'd like to talk with me about other games, here are a few I play.
Team Fortress 2
Borderlands series (Borderlands 2 is my favorite game, ever. TPS combat is a lot of fun and makes up for the lower-quality story, in my opinion)
Elder Scrolls series
Warframe (IGN is something like That_One_Flesh_Atronach)
Pokémon series (HGSS forever)
Rocket League
Fallout series
Left 4 Dead 2 (Boomer files always corrupt though)
SUPERHOT (SUPERHOT is the most innovative shooter I've played in years!)
Dead Rising series (Dead Rising 2 is one of my favorite games, and the 3rd was a lot of fun. 1st has poor survivor AI and the 4th is bad)
Just Cause series
Come to think of it, I mainly play fighting-based games.

I disapprove the concept as you proposed it.
Villagers live in villagers, illagers in mansions and outposts.
Additionally, castles of Middle Ages were really tough nuts to crack, I don't imagine things like sieges on them without massive mob griefing. And even villages provide relative safety from casual threats, but castles give extreme excess of it.
Inter-biome caravans over hundreds or thousands of chunks are going to be really hard to implement.
If anything, I would rather see castles as abandoned, ruined remnants of fallen Human Empire, whose husks of citizens still shoot and bash you every night spent outside. These defense structures would preferably generate with powerful undead inside, like skeletal guards with swords, shields and chain armor or liches (undead mages) acting as walking mob spawners with lootable swords with unique enchantments / made of unique materials, unobtainable otherwise, but at cost of raw killing power of conventionally enchanted tools.

The idea is really for you to build such structures. That's why villages leave so much to be desired, so that you build them better.
Now, some of these features could certainly be implemented despite that.
This sounds more like Civilization, not Minecraft. Not to mention all the complications that would come with making villagers/villager-like mobs this dynamic.
