This is something I've been thinking about for a while. It seemed like an interesting idea, so I thought I'd share it with you all.
My idea is to have food heal over time rather then instantly. Also, while you're under the healing effects of food, you can not eat another until you've fully "digested" what you ate before. to compensate, food items will heal more hearts then they did before, however, the rates at which they heal will be different. Here are some rough estimates I've come up with.
Bread: three hearts, half a heart every five seconds.
Raw pork/fish: Three hearts/three and a half hearts. Half a heart every seven seconds. (Eating raw meat is usually a bad thing. This helps discourage against it by making raw meat heal less for longer. Best for emergencies.)
Cooked Pork/Fish: Five hearts. Half a heart every three seconds.
Apple: Four hearts. half a heart every five seconds.
Mushroom Stew: Five hearts. A full heart every 5 seconds.
Cake: Acts the same due to it's unique nature.
Gold apple: Also act the same because of how hard it is to make.
(Just note that these numbers are off the top of my head. If you have a better figure then go ahead and share it)
Also, food can still be eaten while you're at full health. Damage does not disrupt the healing.
This would also lead to another interface object. Above the health bar will be a "food" bar. The bar will be comprised of pork chops(For the sake of simplicity. Could also be an apple). The number of pork chops represent hearts, with half a pork chop representing half a heart. As you gain heart, the pork chops will in kind disappear until there are none left, at which point you can eat again. (Sorry for no pictures. I'm not exactly an artist.)
My reasoning is as follows:
1: Food is easy to come by. Got a farm? You can then stack wheat and make bread as you please. You can also easily kill pigs and get upwards to one or two pork chops per kill. You then just have to cook them and they heal more. As you stack wheat and carry a work bench around, bread isn't far behind.
2: Could potentially make new foods all the more feasible, especially if they have special effects attached to them.
3: Adds to the challenge. You can't spam bread and full heal in the middle of a fight with this method, so you'll have to be more careful.
4: Could potentially make alchemy and healing potions a good possibility.

Another idea has been brought up is having food heal instantly when you eat it and then heal over time. I like this idea myself, and would probably help in scenarios as explained by someone else in this topic.

Bread: Would instantly heal 1/ 1 and 1/2 heart and then heal 1 and 1/2 more hearts, half a heart every 3 seconds.
Apple: Instantly heal 1 and 1/2 hearts and then 2 hearts, half a heart every 3 seconds.
Raw Pork/fish: Heals 2 hearts and then 2 more, half a heart every 10 seconds.
Cooked Pork/Fish: Instantly heals 3 hearts and three more, half a heart every 3 seconds.
Mushroom stew: Heals 4 hearts and then four more, one half every 3 seconds.

Or realistic mode, when it comes out. Also, maybe eating food should give you a healing spike when you first start eating it. So if you eat cooked pork, it would give you two hearts when you right click with it, and then a heart (or whatever you had it at) every five seconds.

That's not a bad idea. An instant heal followed by a heal over time. That actually works in it's favor.
I am just a guy looking for good suggestions that are original, creative, and match the theme of Mine-craft. I have some mob ideas that I need help forming which is a community project.
MAYBE in realistic mode, but not in current Minecraft. Seriously, here's how I imagine this would be bad:
*creeper blows up* OW! I have 1 heart left... Gotta eat this pork and try and keep these mobs away until I get all my healing out of this... *eats cooked pork* Now I gotta fend these guys off until I have full hearts! *gets shot by a skeleton* OMG!!! F***ING FOOD!! WHY DOES IT HEAL OVERTIME INSTEAD OF INSTANTLY!?
Yes, I approve. This idea will make food, well, food. "Oww, got hit by 3 arrows" *eats 1 porkchop" "Okay, good to go again." Make the foods heal a bit less and healing over time.
This could make way for a brand new skill, alchemy, like you stated. Potions or elixirs would be the ones with the instant effect of healing. Or maybe potions are a bad idea? Because it would be Magical RPG not medieval realism then.
You're worrying about realism in a game with walking exploding shrubs? =)
