One of the good things about Minecraft is its minimum use of UI, and even if some wouldn't call it "good" it is still a defining feature. MMORPG players are used to have a new window pop up for their companion that allows you to control the pet. I have heard it suggested elsewhere that typed chat commands could help you control them. With the current(as of 10pm March 18) limit of "unlimited" wolf pets, then these suggestions are not very sound.
I suggest that food alters their behavior, and give them just a few simple AI options. We already have bones that allow them to be tamed. So we keep that one but add something such as:
Food Option 1:
Pet will stay. Perhaps a chew toy so that its attention is taken up by the food and it stays in one place.
Food Option 2:
Pet will "stay" but be aggressive towards hostile monsters. This is effectively guard dog mode. Armor chest piece icons could fly up much like the hearts used with taming so you know you've got guard dog on.
Food Option 3:
Pet will "follow" like with bones, but will be on Guard mode. Attacking only hostile creatures instead of whatever you attack
So that's 4 quick little options there by utilizing mob aggro and sit/stay features. Shouldn't be too monstrous to code, nor too lacking from a gameplay perspective. New bahaviors could be coded in with later patches as players find new need for them and it would not mess up the UI by having to add more buttons.
if the concern is having so many pets following you that a lack of UI will be a problem, this will use all your inventory space.
If you have a whole pack of dogs after you, it should be hard to control them, so that pack size is limited to your skill in controlling them.

you can probably make a 3 dog whistles out of wood aim at the dog and blow to give a command.

A larger amount of dogs should be harder to control. It helps balance out the possibility of wolf armies.
That would be absolutely epic... I know how I'm defending my SMP base now. Set my dogs to guard, leave to find stuff, come back and find diamond armor and swords laying around.
