The end is full of floating islands, so it would make sense if gravity was less active in the end. For example, mobs could fall far slower, and blocks like sand and gravel wouldn't fall. However, it would be interesting if gravity blocks in the end 'fell' in the way they are pushed by a piston. Another idea would be endermen being able to teleport into an upside down state.
Biome
The end should have a new biome, with plants. However, rather than replace the existing things, it should be underneath the outer islands. The biome would have endsand, which would be like sand, but paler. It would fall upwards in the overworld/nether. It would also have a 'grass' variant, called chorus grass. Chorus grass would be purple, and grow on the underside of the endsand block. There would also be Antipus trees. Antipus trees would have purple wood and leaves, and yellow bark. Antipus trees grow upside down, so their saplings would be placed on the underside of endsand of chorus grass.
I agree completely with the physics part. The End however seems like it's meant to be a barren, rocky void; which would have no reason to have any kind of plant. It'd probably work if the names were changed, because "trees" and "grass" are things I can't see making sense in The End. At least not trees.

If endsand falls up in the overworld, would it just keep go up until it hits the height limit or does it keep going and dissapear?
Edit: Also, how would it behave if the player stood on it? would we fall up with it and then be knocked off at the height limit? Can you place a block on the side of it while it's falling perhaps, as a dangerous way to get to a high place if you can time it right, without pillaring up? Sounds interesting.
Given that the Nether recently received something similar to trees (Yes, I know they are fungi, but they are very close to trees and are functionally the same since they allow you to craft planks and such.) in the upcoming Nether Update, I think a tree-esque feature in the End would feel a bit unoriginal.

It would fall past the height limit and dissappear, similar to sand falling into the void. You wouldn't be able to stand on it or place blocks on it while it falls, just like sand.

It would fall past the height limit and dissappear, similar to sand falling into the void. You wouldn't be able to stand on it or place blocks on it while it falls, just like sand.
