One problem. I encounter three varieties of caves:
1: Those that I made, stalactites wouldn't form in them form obvious reasons.
2: Small caverns with not enough room for such a thing.
3: Gigantic caverns where I can't see the ceiling due to darkness. I'm not going to light up the ceiling because no mobs spawn up there.

Why you hating on Stalagmites? They need love too!
Also. Stalagtites are actually mineral deposits; not erosion.
Actually he is right... stalactites and stalagmites are formed by erosion!
Erosion is the transportation and deposition of weathered material- not the actual weathering itself (ie. breaking or wearing down rocks). As you correctly stated stalactites and stalagmites are both formed by the precipitation of calcium carbonate from water. Precipitation is a form of deposition, and hence they are formed by erosion. Horray for being a mining engineer!
Back on topic, I like this idea. Cave exploration is definitely my favourite part of the game, so I'm all for making them even more interesting to explore. Perhaps they could be formed out of a new block type (chalk?)

That's cool if you want to get technical. When I think erosion; I have an implied notion of actual streams of water/wind literally wearing away at the rock. In a case like this, it would be the opposite effect.
Incompetence is a plague. I am the cure.

There actually was no suggestion in here. Just a story.
