This might be a bit complicated for the overall gameplay of Minecraft, but it would be an interesting mechanic for the more industrial-minded players (and aesthetics in general). It involves quite a few new ingot types, so it's pretty complex.
To start, this would include three brand-new types of ores that could be found in various biomes and depths: Copper, Tin, and Zinc. Copper would be a dull blue-green ore, Tin a shiny black ore with a similar crystalline geometry to Emerald, and Zinc a gray-blue ore. Each of these can be smelted into ingots, with Copper having a light brown color, Tin a darker gray than Iron, and Zinc an even darker gray.
The new Alloy mechanic would involve the use of a Furnace/Smelter, a Cauldron, Buckets, and a variety of materials. The steps are as follows:
1. Place a bucket in the receiving slot of the Furnace/Smelter.
2. "Cook" an ingot.
3. Collect Bucket of Molten (Insert Metal Here).
4. Take filled Bucket and pour into Cauldron, filling it halfway.
5. Repeat ingot cooking process with separate metal type.
6. Mix the new metal with the previous metal in the Cauldron, filling it completely.
7. Collect Bucket of Molten (Insert Alloy Here).
8. Take filled Bucket to Workbench and craft two ingots worth of new alloy.
Alternatively, if the player is mixing a metal with a nonmetal material, follow these steps:
1. Go through first ingot cooking process.
2. Fill Cauldron with molten metal.
3. Add nonmetal ingredient directly to Cauldron with molten metal.
4. Collect molten alloy.
5. Take filled Bucket to Workbench and craft one ingot worth of new alloy.
With these new ores and alloy mechanics, the player can do things like this:
Iron + Coal = Steel (armor+tools more durable than Iron, but not as easily enchanted)
Copper + Zinc = Brass (alternative to Gold in non-armor/tool items)
Copper + Tin = Bronze (durable armor+tools w/ Nether bonuses)
Gold + Copper = Rose Gold (armor+tools stronger than Gold, keeping enchantment bonuses)
Not needed, sounds like something for a mod. I don’t see this for vanilla minecraft.
Honestly, it fits in perfectly with the whole mining theme. The whole idea is collecting ores and using them in various ways, so this seems fitting enough. Also, I'm on console, so mods are impossible for me...
An interesting idea, but (as presented) seems to sit in a sort of uncanny valley between suitable for vanilla and suitable for a mod…
Looking at the last (player can do things like) section and considered as an addition to vanilla: this adds too little for the required amount of change – any of the uses could be more simply added through enchantments and all would effectively add new tiers to the weapon/armor/tool systems. [Given that wood and stone now seem to be brief early-game stages,and iron only a bit longer transition to diamond gear (with gold and leather being MC's redheaded stepchildren) this does'nt seem worth the diversion of resources.]
If instead, one considers this as the base for a mod: I'd want considerably more control of the alloy being made (high carbon and low carbon steel for example). Expanding the alloy list (and quite possibly the list of ores/metals) as well as adding various 'things' (eg. tools) that could only be crafted from (or were substantially better if made using) a particular alloy could offer opportunities for interesting play. [I'm unaware of any mods focusing on metallurgy, but neither have I ever particularly looked.]

The uses presented are simply alternatives to iron or gold. Some have “nether” or “ocean” bonuses, but that’s already covered with enchantments. And trading durability for effectiveness and vice versa is near useless when there are diamonds on the horizon.
I think there should be more uses to alloys than just armor and tools- look at the other ores, none of them are limited to just these items.

I was trying to think of a way to make a Brass Block have some kind of sound property, but I'm not sure how that would work.
The sad thing is, I like copper, tin, and zinc, but it's pretty much impossible to justify adding them without adding an amount of content equal to about 20% of the current game to the game or the ores just be useless. (I'm going to hope that sentence was legible and move on.)
That being said, let's suppose we didn't have to add a bunch of uses for these new metals beyond tools and armor:
I love the idea of adding Copper to Minecraft since it feels like something Minecraft would have, and I like Tin and Zinc too. That being said, you never gave these metals any uses by themselves. The only use they have is to be a part of another metal, and I kinda feel like being able to just alloy ores directly would be preferable if that's the way they're going to be added.
The Alloying System isn't entirely terrible, but the way it's done is incredibly slow. Collecting a lot of iron for a moderately-sized construction project is already almost near-impossible without the use of an iron farm, but just making armor with this system would be an incredibly annoying grind. I think it'd be better if the player could somehow automate this system, perhaps with some kind of pipes that transport liquid from a kiln into the crucible. (Speaking of crucibles, I find it odd that you work with molten Iron in a cauldron made of Iron... This seems like it violates basic workplace safety. Most olde crucibles were made out of clay.)
The alloys aren't too bad, but it seems like we're creating a lot more ores that we don't really have a use for in-game. As I said before, these are just borderline duplicates of previously added ores.
- Since a cauldron can be made with only 7 iron and a bucket with only 3, I'd probably just skip iron tools and go immediately to steel if I was presented the option. Iron may not be common enough to make large buildings with, but normally you can find more than enough ingots for tool-making, and considering a cauldron and bucket last forever, it makes sense to invest in steel-making early so I don't have tools breaking on me as much.
- Brass is quite literally a copy of Gold. Not only that, but it's not even a fitting replacement for Gold... Brass isn't really a magical metal like Gold is, in fact, Brass is more of a steampunk-ish or industrial metal.
- You never specified exactly how durable Bronze is, but I imagine it would have to be as durable as iron or better (which doesn't make a lot of sense) because we can already craft iron. Unless those Nether bonuses play a role, and I'm not sure why these tools and armor would have a bonus in the Nether since both Tin and Copper have lower melting points than Iron, so I'm not sure I understand the connection here between Bronze and "good in hot biomes"
- Rose Gold is a direct copy of gold, although I'd almost prefer if this alloy replaced gold tools and armor if we ever added any of these to the game. Then make Rose Gold worth the durability loss and I think it'd be good.
- Historical accounts seem to indicate that Orichalcum was pretty much just Brass, but ignoring that, this one at least makes a little bit of sense depending on what the sea bonuses are, but you never specified these bonuses.
You mention that these new metals open up possibilities for new items, but you only casually mention some ideas. This is the problem with adding new ores and you just skimmed over it: all of these ores need uses after the player collects Diamonds and makes armor and tools out of those.

See, that's the part I don't like. Minecraft wasn't supposed to become as complicated as it is at this point. pre 1.9 it was pretty perfect, you had all the redstone crap but thats for technicians in minecraft. post 1.9 it became too complicated for most players and most people left.
But, if we take that out of the way, the idea of the ores seem pretty boring besides zinc. Why not something interesting like ruby or titanium? Or, some may consider it better, but ditch the whole adding ores idea for now and add new bosses. If you count the raids, the only bosses are really the ender dragon, elder guardians, and the wither. Or add new weapons. The crossbow is a good addition, but why not add magic spells like Terarria. Just a thought.

Adding some more ores would be cool, and alloy making, (though I don’t really think the form of alloy making in the original post would be that good), and we DEFIANTLY need more bosses, and yes, more weapons and spells. I totally agree with you with almost everything and I even had ideas of good updates before your post!! I will give you a few hints of my ideas: (dragons, jungle overhaul, Druid, sea)
