What is Piece-By-Piece crafting? it is being able to (optionally) make the pieces of your equipment seperate from the item itself, thereby allowing far more versatile recipes, like so:

and, in this case, you get a custom sword, with an iron core, diamond edge, and gold hilt.
while it may seem detrimental, due to increased material usage, it can create some really awesome stuff, and some of these combinations could yield unexpected results, such as an axe made of gold that outmatches diamond because of a single, itty-bitty change, or likewise, a useless thing that breaks after its first use because you omitted that one crucial element. as an added bonus, you can use previously unusable materials in your weaponry (obsidian hilt, anyone? it increases durability! or maybe a netherrack edge, for an immolator effect? or perhaps you'd like an arrow that detonates creepers before they can hit you?). plus, you can get creative with your stuff!
of course, some may think "this is too hard; can't we just make things out of different materials?"
the answer: yes. i thought of that before even the piece-by-piece system: to use it, all you need is to make the standard recipe, but just use different materials at different parts, like this: []

and you get a diamond-leather-iron hybrid chestplate. this often produces inferior equipment, due to its not using solid materials, but it can also produce superior items, like adding a diamond in each of the knees of your leggings. please note that not all of these seemingly inferior/superior designs will have the expected result: adding a bit of leather to an iron chestplate might just make it a tiny bit better, or adding a diamond to a leather tunic being a complete waste of diamond.
With these two systems, it allows you to get really creative with your stuff. you could create a 2-headed axe that deals more damage than a diamond sword, or you could make a hilarious suit of armor out of dynamite that explodes when you take damage! the possibilities are almost endless.

This would really force Notch to make the crafting table procedural as opposed to recipe based.
While this notion seems awesome, it would also be unbearably difficult to do.
I'll have to go with a no due to the overwhelming complexity involved with this. And when it boils down to it, people really wouldn't experiment with it; they'd just go and copy the best item of each build and use that.
