Hello. I'd like to share some ideas that have been in my mind for a while now.
Some weeks ago, I stumbled upon a Youtube comment in a Minecraft video by MagmaMusen ( Minecraft: 10 Things You Will Never Unsee ) pointing out how chickens and cows reproduce in the game. Here is what the comment basically pointed out:
If all the chickens in the game are hens, how are they able to produce chicks and lay eggs that hatch into chicks?. The same mechanics go for cows in the game too.
And with that, the idea of having bulls and roosters into the game came up.
Roosters don't need to have their own spawn egg. Since we already have a chicken spawn egg, I was thinking of having the hens and roosters share spawn eggs. Having a chance of spawning either a hen or a rooster when used. Roosters would also have the same chance of dropping the same items as the hens. What I also really like about having roosters in the game is the cock-a-doodle-do feature that they could add into the game. Once the sun rises in the game, nearby roosters would fly on top of trees (or onto any high objects/terrain) and crow. This would also be useful when mining and want to know the time (if you don't have a clock crafted yet), whether its already morning and safe to go back to the surface. The volume of their crow won't be the same as when they crow next to you but enough to hear their crow even when mining.
Bulls would also be a great addition to the game. Bulls would be a little bit bigger than cows and would only drop leather (as they are not usually raised for their meat). Bulls would become aggressive when provoked and charge at you, dealing 3 hearts of damage and a knockback. If you are within their range, bulls would chase and charge at you. Riding a bull is also possible, if you tame it that is. Attempting to ride an untamed bull will provoke it and will knock you off and charge at you.
As for now, those are the functions and features I have for the two mobs. I would really like to hear your feedback regarding my suggestions and it would be awesome if you could also suggest more functions to the two mobs.
Given that MS/Mj seems to have lowered the target demagraphic to teen/pre-teen, an addition of more realistic stock breeding (and explicitly male animals) seems very unlikely.
Equines and llamas already have associated (extremely simplified) breeding 'mini-games'; whether more of this is desirable in the vanilla game is questionable.
Adding occasional combed chickens and unpolled cattle (without explicit reference to the sex thereof) might be a way to avoid age-rating issues if only the cosmetic behaviors were desired. [Given, however, some of the published MS/Mj reasons for not adding sharks, bull-riding would seem unlikely if this thinking process is maintained.]
Damage from 'passive' mobs would be a much greater change… and not particularly sensible in a game that ignores the potential from crushing/trampling when players enter a pen crowded with cattle…

WARNING: I have an extemely "grindy" playstyle; YMMV — if this doesn't seem fun to you, mine what you can from it & bin the rest.
Adding genders to the game right now seems too forced. Since there's the whole "chicken or duck" thing with chickens I could see a specific rooster mob being added, but not bulls. Bulls also should drop meat. In real life they're only kept for breeding purposes if they'd be excellent for the job; otherwise, they're raised until market size and then sold.
