True, but wouldn't we see the mines now? To say it was 'back when they actually mined' with no existing mines is like saying 'we ate cupcakes at the party' but having no crumbs on the floor to prove it.
I do think we should take the 'villagers used to mine' path, but that requires more mines.

These mines would look like a larger version of an abandoned mineshaft - but have a lot more torches, maybe they would have emeralds and picks in chests?
Also there would be lumps of stone on the floor where the cave ceiling had collapsed over time, and the indents in the ceiling could access caves, other parts of the mine could not.
Now it's time to move on to the other part...
Zombie miners
Sure, we could just use zombie villagers, but those are supposed to be normal villagers turned into zombies.
Miners are a different type of villager, guys.
OK, I'll admit it. These guys need to be able to be cured, and would have to turn into Miners.
I'm sure it's possible to choose what type of villager we wanted to spawn, but based on the negativity villager miners got, these would just be cured into Nitwits. And besides, this thread is supposed to be about villager-free emerald currency. By this point we ARE using a zombie villager, just a different Nitwit zombie texture.
I really hope this thread gets more support then my other one.

I like to work with datapacks and commands a lot, and I have a YT channel called Game_bot_0207
I don't see any need for mines to support village currency (or industry).
If one wishes to imagine some kind of 'realistic' 'economy' for MC villages:
'loring away' both as due to prior interactions with other players (which can be imagined to exist even in SSP) and/or other villages seems not too great a stretch. [Current brown-coats are not able to till grass/dirt, which incongruity seems at least equally puzzling.]
All that aside, adding good enough AI that ingame denizens can make passibly coherent changes to the game world would be daunting, even assuming this is possible on equipment commonly in use. (The sort of random changes produced by endermen being a very different issue.)

Villagers are smart enough to trade, which is about smart enough to see the need for, and design, traversable mineshafts.
The mineshafts are far from traversable.
Yes, some of this is caused by abandon of the mineshaft, but look closely at any mineshaft (or not so closely if you want) and you'll see it was never smartly designed.
(Traversable isn't a word, but look up traverse and you'll figure out what I mean by traversable.)

About the spider spawners. They probally moved in after the villagers stopped mining. Also lets say that villagers stopped mining because zombies became a thing. They would most likely seal back up the mines to prevent the zombies from coming up. Explaining why you can't find an entrance.
We already have structures generating with underground component. Like desert temples. It would be interesting if villages generated a sort of mini-mineshaft underneath.
But frankly, I would say existing mineshafts as they are, are 'it'.
About being 'traversable'... seriously? Often enough, villages themselves are not 'traversable'. Ever seen a village gen in some hills? Some houses 10+ blocks above others, some houses with doors totally buried.

I saw one in an AMPLIFIED world (using all caps because minecraft also does) . Judging by the comments on the latest snapshot, they might fix that in 1.14, but for now I agree.

They would be a little way away from the village, as mines being IN the village would:
(A) Expose the villagers to zombie miners, even in daylight
