They eat the wood so you can not use them to tree farm, but you might be able to make a compost farm.

Taming a colony
Basically you need to find a termite queen and king which could be found in forests and commonly found in jungles. All you need is dark oak wood logs or oak wood logs to tame them[you need about 16-24 logs per termite] but they will come to you like ocelots then you can tame them.
Growing your colony
The first few days will be hard, to start the colony you need to take them into a chamber built by you or a cave will do then feed the queen logs then she will start laying eggs, but you need to make sure they are safe because there will be ant raids, and pillager raids to stop the colony from growing, but once there are termites hatched they will start working on the colony[unless you pre-built a colony for them] until then you and the king are the only defense. The max colony consists of about 50 termites.
Use of termites
You can use an termite control wand to control them which is crafted
Then you can use the wand by right clicking the termite then right clicking the starting block and then right clicking the ending block and it will say in the chat Successfully created an patrol, after that the termite you selected will patrol that path and will defend against pillagers, Zombies, Skeletons, Spiders, and ants. Also you can’t use a queen termite for patrols but you can use the king.
If you want to build a colony for them
You need to make a tower approximately 30 block tall with at least 10 livable rooms and 10 non-livable rooms. To classify these rooms you need to put at least 10 oak logs in the livable rooms and literally nothing in the non-livable rooms.

There are 3 types of chambers Brood room houses the brood if you take an egg you will be attack by dozens of ants, Rest room basically empty but you will see ants come in and rest for 1 minute or less, Queen room huge room holds the queen generally the deepest room in the nest [you will see ants come grab eggs and take them to a brood room].

Anyways you need to feed the queen termite meat once you got it in the chamber then it will start laying eggs. Maximum colony consists of 60 ants.
Use of the colony
Ant colonies are useful for protection but what you need is an ant control wand then you can use the control wand to mark a path for patrols just right click the starting point then right click the turnaround point then right click on the ant you want to patrol the area it should say in the chat Patrol successfully completed. Basically the patrol will follow that path and attack Zombies, Skeletons, Spiders, and Termites which makes them useful for village defense. Also you can’t use a queen ant for a patrol.

You need a hill approximately 40 block wide and 40 blocks in length it also needs 20 chambers consisting of 16 rest rooms, 4 brood rooms, and 1 queen room.

No Support. This is an insanely complex addition to the game that is way too overpowered and I don't think it would fit very well. Firstly let's just consider some existing mob stats, I'll only do their hard damage values since that's what you're referencing:
Spider: 20hp 3dmg
Zombie: 20hp 4dmg
Skeleton 20hp 1-5dmg
Evoker: 24hp 6dmg
Vex: 14hp 13dmg
Vindicaor: 24hp 19dmg
Wither Boss: 300hp 12dmg
Ender Dragon: 200hp 15dmg
I hope you're seeing the problem. Your weakest mob has every bit of health a zombie does but does nearly twice the damage and the second weakest has more hp than most (if not all) non-boss mobs. I also don't quite understand your rarity scale thing but I'd say even 1 ant colony is too many if "Ant nests can be chunks in length and width but they are always expanding." I doubt any addition will be made that can take over an entire minecraft continent without player involvement and how would this work when an ant walks into a chunk that's never been rendered with the intent to build on non-existent blocks? I also find the idea of a 'control stick' off-putting as nothing like that exists in the game. I just find the whole idea a bit alien to the landscape of minecraft and those mob stats just make it an absolute no from me.
