The ambush bug would be a large insect, like a beetle with a chameleon-like cloaking ability. It would absorb the color of the texture around itself, so if it's on a grass block, it would be covered in the grass texture. If it's sitting on gravel, it would be covered in the gravel texture, etc. and so forth.
Instead of making a different skin for each terrain type, the terrain texture would simply be applied to the bug model. Naturally, this means the texture application wouldn't be perfect. There would be visible seams and mismatched areas, but that's actually okay. For one thing, no chameleon is perfect. The minor flaws would give the players a chance to spot the ambush bug. This would also mean texture modders wouldn't have to create multiple skins for the bug. Whatever changes they make to terrain textures will automatically carry over to the bug.
The ambush bug would, as the name implies, prefer sneak attacks. It would remain perfectly still if the player is looking at it. Being stalked by an ambush bug would be a scary game of "red light/green light". The player would hear something moving behind them and turn around. If they didn't look carefully enough, they would miss seeing the bug. Whenever they turned their back again, they would hear the bug get a little closer. This would continue until the player either spotted the bug and dealt with it or the bug got close enough to pounce.
A bug attack would do about as much damage as a spider jump. Once a bug leaps to attack, it loses its camouflage, reverting to a dull colorless gray color. It also reverts to this color when killed.
I think the bug should drop diamonds as loot. Not all the time. Maybe there should be a five percent chance that a slain ambush bug will drop a diamond?
Ambush bugs will not perish in sunlight and, unlike spiders, would retain their aggressive attitude.
how about if it dropped flowers usually (so you can have a renewable way to get dyes) with a very small chance of something rarer? (diamonds seems to rare to me, but other people may like it) if the aether gets implements, i believe i remember a block that changes to look like other blocks in that idea, so that would be a perfect drop for this critter.
also, this guy should be kinda a rare spawn, not as common as other mobs
